I love eating light.  Don’t you?

This original recipe….by Yours Truly

reminds me of spring.

I’m ready for spring.  Aren’t you?

Take heart….it’s just around the corner,

but…until then,

thank goodness for this

simple and quick little bowl of springy goodness.

Ingredients:

Romaine lettuce – 2 cups in bite size pieces

Spinach – 2 cups in bite size pieces

Strawberries – 6 to 8 big beauties

Blackberries – about 3 ounces – 8 to 10 berries

Yellow Delicious Apple – one whole – diced with the peel on

Green Onion – one or two whole shoots diced

Croutons – your favs – just toss some in

Sunflower Seeds –  a handful will do

Shredded Parmesan Cheese – about 3 or 4 ounces

Lite Poppy Seed Dressing – 4 ounces

Lite Raspberry Vinaigrette – 4 ounces

Steps…they all just roll into one…..

Line the bottom of the bowl with lettuce and spinach.

Add blackberries, strawberries, and apple.

Toss in as much green onion as you like…

 and croutons….

Enjoy mixed greens with fresh berries in a quick 15-minutes | The Chelsea Project | www.thechelseaproject.com

 Sprinkle in sunflower seeds……

Mixed greens are tossed with strawberries, blackberries, apple, and sunflower seeds then tossed again in a lite poppy seed vinaigrette | The Chelsea Project | www.thechelseaproject.com

 Then toss with a one-to-one blend of Lite Raspberry and Lite Poppy Seed dressings….and top with parmesan cheese.

 One bite.

Huuummmm.
