Or, in this case, a quick “Southern” 15.

A hearty dish in 15-minutes is easy and stress-free | Cheesy Mashed Potatoes with Caramelized Onions and Jalapenos | www.thechelseaproject.comOne of my absolute favorite new recipes is this cheesy comfort food, with a flavor up-swing from the caramelized onions and jalapenos.  We love it served up with a juicy hamburger or grilled chicken breast.  And, we hope you’ll love it, too.

15-Minute Cheesy Mashed Potatoes with Caramelized Onions and Jalapenos
Serves 4
A new spin on an American staple. Diced onions and jalapenos are sauteed in butter until browned and then added to cheese-laced mashed potatoes.

For the onion/jalapeno mixture
  1. 1/2 medium onion - diced
  2. 1/2 medium jalapeno - diced
  3. 1 Tablespoon butter
For the potato mixture
  1. 8 cups skim milk
  2. 4 cups instant potatoes
  3. 1 cup shredded cheddar cheese
  4. 1/2 teaspoon black pepper
  5. 1 & 1/2 teaspoons salt
  6. 1/4 teaspoon granulated garlic
  7. 2 tablespoons butter
Instructions
  1. Add milk to dutch oven and set it to begin heating.
  2. Dice the onion and jalapeno, and toss in a saute pan with the butter.
  3. When the milk begins to simmer, but not boil, take the pot away from the heat and add the instant potatoes and butter.
  4. Using a mixer, whip the potato mixture on high speed until fluffy.
  5. Add the salt, pepper, garlic, cheese, and the onion/jalapeno mixture to the potato mixture.
  6. Mix well and serve.
Notes
  1. If fresh garlic is used, saute the garlic with the onions and jalapenos.
  2. These potatoes are great as a side dish to main dishes made with chicken, pork, or beef.
